I have had Ina Garten’s Spinach Gratin dog-eared in my Parties! cookbook for well over a year. Every time I flipped past the page, I would think that I needed to make it, and then… I wouldn’t.

Well, I finally got a bee in my bonnet to make it happen and oh. my. goodness. We were obsessed.
This is one of those recipes where everything is just perfectly balanced. It’s rich and creamy without being too heavy, wonderfully flavored and elevated enough that I would happily serve it to company. We all loved it, and it will absolutely be back on my table for the holidays, if not well before then.
Since I was only making dinner for the three of us plus a friend eating over, I halved Ina’s recipe. Even at half, it made plenty for the four of us with leftovers. In fact, I happily ate the spinach gratin for lunch for the next few days.
I served it with grilled chicken and a bag of corn I’ve been meaning to clear out of the freezer.

I especially love finding a side dish that feels special enough for Thanksgiving or Christmas but isn’t something you need to save exclusively for a holiday. This would be equally delicious alongside a nice steak or roast for company or as part of an otherwise ordinary Sunday supper.
This one’s a keeper!
