We spent part of Labor Day weekend at a cookout at our neighbors’ house, and when I was trying to decide what to bring, I landed on Ina Garten’s Tomato & Avocado Salad. It was exactly what I wanted for one last summer cookout.

This is one of those wonderfully simple Ina recipes that doesn’t require a lot of time or ingredients but somehow tastes far better than the sum of its parts. It’s simply cherry tomatoes, avocado, red onion and arugula tossed in a fresh lemon vinaigrette. The whole thing comes together quickly, can be served at room temperature and is absolutely delicious. Our neighbors served wings and sausage, and the fresh, bright salad was the perfect thing alongside them.
We had just a little bit left over, and the next day I pulled it out of the refrigerator and ate it with chips for lunch. I suppose at that point we’d crossed the line from salad to dip, but I wasn’t mad about it.
This one is definitely going into my summer rotation. It would be so easy to bring to a cookout, serve alongside anything off the grill or throw together for an easy supper at home. And while Labor Day may be the unofficial end of summer, our Georgia tomatoes haven’t gotten that memo quite yet, so I suspect I’ll be making it at least once more before fall really arrives.
We wrapped up our night with a few rounds of mahj, and that made for a Sunday well spent!
