I’ve been all about cozy suppers this month, what with our freezing temps for days! My guys love chicken and they much prefer the variety of pieces AND skin on a whole chicken versus always doing breasts. Needless to say, this was a hit!

I’ve roasted quite a few chickens in my career and this one had the most gorgeous finish. While it did not require basting every 30 minutes or stuffing my hands in any orifices, it did require Honey to spatchcock so definitely consider that.

I’m also learning to scale our menu to feed 3 OR have leftovers that we can enjoy without getting fatigued of the dish. The leftover chicken was perfect to enjoy for my lunches the rest of the week – shredded in quesadillas and chopped on salads.
