Sunday Sweet {Lemon Cake}

I made the most divine lemon cake to enjoy over the long holiday weekend, and not a single crumb was left before we were even halfway through! This one was truly a labor of love … zesting eight lemons and squeezing out every last drop of their juice. (I used the extra juice for fresh squeezed margs!) But all that effort was so worth it to turn out two beautiful lemon cakes that tasted like summer sunshine in every bite.

In our haste to dig in, I completely forgot to snap a proper photo. I suppose that’s the best sign of a good recipe! All I have is this quick snap with a few slices plated up for aqua mahj, where the ladies agreed it was just as heavenly as I promised.

It’s the kind of cake that feels right at home on a summer porch. We enjoyed it for breakfast, desserts and any excuse between.
