While it’s not quite cozy soup weather yet, I stumbled across Ina Garten’s Pork Posole in her Cook Like a Pro cookbook and simply couldn’t resist. My boys are big fans of Mexican food and big fans of soup, so this recipe felt like a fun twist on our usual standbys.

And let me tell you – it did not disappoint. The posole was absolutely delicious, hearty, and filling. Don’t sleep on the toppings, either. I went with shredded cheddar, cilantro, sour cream and avocado.

One of my favorite parts? Well, if you’ve been around awhile you’ll guess it… this recipe makes a generous batch. It fed us well for Sunday Supper and left plenty for a couple of easy lunches the next day. And that’s always a win in my book!
With Lessons in Chemistry back on my mind for book club, I thought this line from Elizabeth Zott made the perfect Sunday Supper send-off:
“Children, set the table. Your mother needs a moment to herself.”
