Sunday Supper {Steak Salad}

This Sunday Supper was a total hit and not a scrap was left on any plate! I served up a hearty steak salad with the most flavorful balsamic roasted red onions and a generous helping of my favorite blue cheese crumbled on top. The inspiration recipe comes from Barefoot Contessa Parties!, but I added grilled steak because… well, I know my guys and their love of meat. It was simple, fresh, and downright delicious.

Steak & Blue Cheese Salad

Adapted from Barefoot Contessa Parties! Recipe

  • 3 small red onions (cut each onion in half and slice 1/4″ thick)
  • 1/4 cup plus 2 tablespoons good balsamic vinegar
  • 1 cup good olive oil
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 6 tablespoons minced shallots (2 large)
  • 2 teaspoons Dijon mustard
  • 1/4 cup good red wine vinegar
  • 3/4 – 1 lb blue cheese (my fave is Point Reyes)
  • 2 heads red-leaf, washed, spun dry, and torn into pieces
  • Steak, grilled and sliced into strips
  1. Preheat the oven to 375 degrees F.
  2. Place sliced onions on a baking sheet and toss with: 1/4 cup balsamic vinegar, 1/4 cup olive oil, 1 teaspoon salt and 1/2 teaspoon pepper.
  3. Bake for 15-20 minutes, until the onions are tender.
  4. Remove from oven and toss with 2 more tablespoons balsamic vinegar and cool to room temperature.
  5. Whisk together the shallots, mustard, red wine vinegar, 1/2 teaspoon salt and 1/2 teaspoon pepper in a small bowl. While whisking, add 3/4 cup olive oil until emulsified. Mash 1/4 lb of the blue cheese with a fork and add to the dressing.
  6. To assemble, toss enough lettuce for 6 people with dressing, to taste. Place the lettuce on 6 plates and arrange the onions on top. Coarsely crumble the rest of the blue cheese on top. Divide up steak to top each plate, if using. Sprinkle with salt and pepper and serve.
