This week’s Sunday Supper was the perfect Labor Day weekend finale, and a taste of summer from start to finish. On the menu: Ina Garten’s Tequila Lime Chicken and Frozen Key Lime Pie. They paired beautifully together and felt like the most refreshing way to close out the season.

The chicken recipe is meant for the grill, but since Honey was buried in paint projects in the basement, I roasted it in the oven instead (a little too long, oops). Even so, the flavors were spot on – bright, citrusy, and delicious. We all agreed it would be absolutely divine hot off the grill. Since it is marinated the night before, it makes a great choice for easy entertaining or a busy day. To round out the meal, I kept things simple with an Avocado Caesar salad kit.

For dessert, Whit requested one of his all-time favorites: key lime pie. This particular recipe was a new one for me, and every part was made from scratch… from the crust to the whipped topping. It was a little more effort than usual, but so worth it. Unlike my go-to recipe that uses bottled juice, this version makes the most of fresh squeezed (and zested!) limes. It was truly the star of the night.

We ended the evening with the hot tub cranked up, soaking in one “last” summer night.
