Sunday Supper {Parchment Baked Roasted Red Pepper Salmon}

Y’all….. I FINALLY turned out some edible fish in my kitchen!! And honestly, it wasn’t simply edible but it was truly delicious! Aside from Honey’s pandemic tuna steaks, I have tried and failed at fish for twenty years. The sauce on this salmon would make cardboard taste good, but everything was perfectly flavored and cooked to perfection by following the recipe. Everyone loved it but Whit, who suddenly doesn’t eat things from the sea that aren’t sushi. Go make sense of that. :-)

The recipe is from Half Baked Harvest. Everything on her page is delicious. I followed it to a “t” but added an extra potato (which was good because they were yummy) and store bought tzatziki sauce (Whole Foods because I was there. Trader Joe’s makes a good one too.)

It was an absolutely gorgeous day and the perfect cap to our weekend. It’s also a fantastic find for Lent!
