Happy Sunday, friends! Today’s recipe comes from Ina Garten and is one that absolutely lived up to the hype – Charlie Bird’s Farro Salad.

This was a delicious, fresh, and hearty salad, perfect for early fall. I loved all of the flavors… peppery arugula, sweet cherry tomatoes, creamy Parmesan, and that wonderful nutty farro base. It’s one of those dishes that somehow feels healthy and indulgent all at once!

I enjoyed mine just as is, but the guys paired it with rotisserie chicken for a protein and gave it two thumbs up. It’s versatile enough to serve as a light main course, a side dish, or even a great make ahead option for weekday lunches (which I totally did with the leftovers).
