We still have snow on the ground in Georgia and spent the last week eating all the cozy things – both for John’s last week home before spring semester AND for our freezing weather. This soup was really easy and delicious. A nice alternative to the more traditional chicken noodle soup, but just as comforting and homey.

Because my boys are ramen enthusiasts and simply cannot do without a soft boiled egg, I added those. I use my Dash egg cooker daily (hard boiled, omelette, soft boiled, etc.) John even took one with him to Auburn! The soft boiled are pretty hard to peel but that may just be user error. Hard boiled peel like a dream.
I am always looking to make a recipe go further, so I made these revisions:
- added 2 packs of ramen noodles
- added extra chicken breast
- added soft boiled eggs
I’ve made Symphony Brownies for years but at some point on Christmas break came across a giant Heath bar. They were SO GOOD! Heath is my favorite candy bar so consider that. I still remember back in Belk at Oglethorpe Mall they had a candy case on the upper level. The BIGGEST treat was when Daddy-O let us get a piece of toffee. To this day I’ve not had toffee that tasted so good.

That soup looks delicious. How soft are your soft boiled eggs. I like my yellow just gelled. My daughter just moved away and I miss her terribly.
Hugs mama! These were runny yellow, which is what my boys like. They claim the broth cooks it some. I like mine HARD boiled :-)
