Sunday Brunch {Potato Basil Frittata}

Over the long Labor Day weekend, we tried Ina Garten’s Potato Basil Frittata for brunch. It was really good and made for a hearty meal.

I loved using fresh basil from my garden. It adds such a bright, herby flavor and literally makes me feel like some sort of herb whisperer / culinary genius. HA! Peeling, dicing, and cooking the potatoes did take a bit of time, though, so if you’re looking for a shortcut, frozen hash browns would likely work beautifully. Or, if you have a Honey around, he comes in quite handy with this type of prep.

Now, if I had to choose just one frittata to eat for the rest of my life, I’d go with the Roasted Vegetable Frittata I shared earlier this summer. It was absolutely delicious, summery and an overall win.
