I’m back today with a delicious recipe that’s easy enough to throw together on a school night! We absolutely loved this meal and the recipe went straight in my “make again soon” pile. Whit beat me to the leftovers the next day, after I thought about having them again for my supper all.day.long! That’s the hallmark of a fabulous meal around here – the race to the leftovers. I knew I should have doubled the recipe.

Mine looks a little different from hers because I forgot to thaw the chicken. I ended up cooking it in the instant pot, chopping it and then starting with the recipe and sauce mixture. While the presentation was a little shady, it tasted delicious.
I omitted the mango salsa. My guys do not like fruit mixed with meat. Stinkers. I also upped the broccoli because I’m a mom, I am the cook and I can.
