Happy Sunday, y’all! It’s been a good long while since I had a Sunday Supper. When I posted this pic on Instagram, loads of y’all wanted to know about the potato recipe. It’s SO good!! It does take some time, but it is great for a crowd (it’s filling and rich) and is a staple on every holiday table around here.
The chicken is SUPER easy and quite yummy and makes a great school night supper as well.
Nicole’s White Wine Chicken
4-8 chicken breasts (I use 8 small pieces to have leftovers)
1 cup white wine (I use Trader Joe’s)
1 can cream of mushroom soup
1 can french onion soup
Spray crock pot with cooking spray. Put in chicken pieces. Pour in everything else. Cook on low 6-8 hours.
Note: I have also made with frozen chicken breasts and it works just fine!
Marme’s Twice Baked Potato Casserole
8 medium sized baking potatoes (about 5 lbs), baked until soft
2 cups shredded cheddar cheese, divided
16 oz sour cream
8 oz cream cheese, softened
1/2 cup heavy cream
1/2 cup butter, melted
2 garlic cloves, minced
1T. fresh chives, chopped
1 1/2 tsp salt
1/2 tsp pepper
6 bacon slices, cooked and crumbled
4 green onions, chopped
1/4 cup fresh chives, chopped
- Cut baked and slightly cooled potatoes in half length wise. Scoop out pulp and coarsely mash.
- Stir in 1 cup cheddar cheese and next 8 ingredients.
- Spoon into lightly greased 13×9″ baking dish.
- Bake at 350 for 30 minutes until thoroughly heated. Sprinkle with remaining 1 cup cheese, bacon, green onions and chives and return to oven for 5 minutes, or until cheese is melted.
Note: Mother puts everything in step 2 in her kitchenaid mixer and uses that to get it all thoroughly combined. Also, I have substituted milk for the heavy cream and its really not as good. :-) Mother would never do that and is probably cringing right now.

Things will kick into high gear around here from tomorrow straight through Memorial Day with Whit’s first communion, the end of the school year, the end of 5th grade, our 15 year anniversary, Honey’s birthday, Bird’s birthday, CeeCee’s recital, a visit from my parents (fingers crossed) and so much more! I’m really really excited for the fun ahead and am glad we had a bit of a breather this weekend before it all starts.
