School Night Supper {Eggs in Purgatory}

This simple and cozy dish is one of our school night go-tos as of late. I always have the ingredients on hand and it is easy to scale up when I have more people eating, or down if it is just Honey and me. I figure this will be a great dish for the Lenten season too.
