Perfectly Portioned Pizzas

We looooove us some pizza around these parts.  Last week while snacking on some Trader Joe’s eggplant curry (mmmmmm…) and garlic naan, I had the bright idea to turn the naan into mini personal pizzas!  So a few days and one four pack of garlic naan later, we dined on perfectly portioned pizzas loaded up to our heart’s delight.

Simply heat the naan as directed (400 degree oven for two minutes), add toppings and pop back in the oven until cheese is melted!  I chose fresh mozzarella, tomatoes and basil from our garden, and salt and pepper. The boys were all a bit more adventurous, employing pizza sauce, ham slices, boiled peanuts(???), and a sundry of other varied and unique items from our fridge and cupboard in their creations.

This is one we’ll do again and again!
