Make This, Not That {Meatloaf & Mashed Potatoes}

I have been sharing our Sunday Suppers, School Night Suppers and various other recipes for years.  I sometimes just skip over things that weren’t a hit and don’t ever share.  For a change, I have a series of recipes here that I’m calling Make This, Not That.  Haha!  The first installment is meatloaf and mashed potatoes – a perennial favorite around here and a supper that everyone gets excited about.

For last week’s Sunday Supper, I made the meatloaf and mashed potatoes from the Magnolia Table cookbook.

I’ll be the first to admit that I raised my eyebrows at two of the meatloaf ingredients – saltines and cheese.  Hmmm…. I’ve made my share of meatloaf over the last 16 years of wedded bliss (until I found our FAVE) and had not run across a recipe quite like this one.  It wasn’t terrible, but it wasn’t great.  It was too dry for my liking and there was way too much filler without not enough meat, ya know?!  Like a bad crab cake but in meatloaf form.

As for the mashed potatoes, I realize that is a pretty basic process with pretty standard ingredients.  But, these were just meh.

So, this brings me to the meatloaf and mashed potatoes I DO recommend making!!!

All American Meatloaf

In this pic I happened to make it Mickey shaped, but it is usually served in two regular loaves.  This recipe is from one of my favorite cookbooks that is getting hard to find – the  Southern Living Ultimate Cookbook.

Truffle Mashed Potatoes

Now, these are without contest the BEST mashed potatoes.  But, with meatloaf I leave out the truffle oil and add extra butter.  This recipe is from my all time favorite cookbook – Foolproof by Ina Garten.
