A while back when the Alabama rush documentary was all the buzz, we gathered at my besties house for girl talk, apps, wine and a watch party. While we all agreed the documentary fell short of what we were expecting, the food certainly did not! I wanted to share the two things I whipped up for the night – both were delicious and I’ve made both of them a few times since the party!
Blackberry Lavender Champagne Cocktail
I’m on my fourth batch of this and it has been a wild success every time I’ve served it!! I currently have some of the syrup in the freezer because we were leaving town and every drop is like liquid gold!
Whipped Goat Cheese
This comes together quickly and is divine. There was nowhere to link this recipe from her YouTube or Instagram, so I’ve typed it in below!
Ingredients:
1 log of Chèvre (10-11 ounce log)
4 ounces room temp cream cheese
1/3 cup EVOO
2 cloves of garlic
1 tablespoon of honey plus more for garnish
Pinch of red pepper + black pepper + kosher salt
2 sprigs of fresh oregano or thyme (1 sprig for mixture, the other for garnish)
1 teaspoon of lemon zest plus more for garnish
Directions:
In a food processor, combine goat cheese, cream cheese, EVOO, garlic, honey, lemon zest, oregano or thyme, and a pinch of red pepper+salt and black pepper into a food processor. Pulse until creamy and smooth. Spoon into a bowl. Garnish with more lemon zest, red & black pepper, drizzle of honey and oregano. Serve with crackers or bread, prosciutto and olives!
Serve these at your next gathering and all your guests will be over the moon!
