General Mills sent us a big box for Christmas with all of the things we needed to make a long-time holiday treat, Muddy Buddies.
The funny thing is that I used to make these all the time. I guess they just fell off my radar, as recipes tend to do over time. We bagged *most of* them up and took them in to the front office staffs at our schools!
As for the rest, well we enjoyed those at home. :-)
Muddy Buddies (Gluten Free)
9 cups Rice Chex
1 cup semi sweet chocolate chips
1/2 cup creamy peanut butter
1/4 cup butter
1 tsp vanilla
1 1/2 cups powdered sugar
- Place cereal in large mixing bowl; set aside.
- Place chocolate chips, peanut butter and butter uncovered into microwavable bowl. Microwave 1 minute on High. Stir. Microwave about 30 seconds longer or until mixture can be stirred smooth; stir in vanilla.
- Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag. (I split mine between two 1-gallon bags)
- Pour powdered sugar into bag with cereal mixture. Seal bag. Shake until well coated. Spread on parchment paper to cool. Store in airtight container in refrigerator.
