Two Amazing Dads

I’m popping in today to wish Daddy-O a very happy Father’s Day.  I will always be grateful for the hands-on role he played in raising us.  He wasn’t easy on us, but I certainly never doubted that he loved us.  My fondest memories of him are when he would come visit me solo at Georgia Tech before Sister came two years later.  He always took me to the nicest dinners – Pleasant Peasant and Houston’s being our favorites – and ensured I had plenty of leftovers to carry back to the dorm or ZTA house.  He was very well loved by all of my friends, which is not surprising in the least seeing as he’s never met a stranger as far as I can tell.

We are also celebrating the patient, steadfast, coaster riding, race running, puppy loving, expert video gaming, sky diving, go-along-with-the-crazy father to these two.  He works so hard caring for us and loving us.  I am thankful for him – as a husband, father and friend – every single day.  We spent our weekend at a lacrosse tournament – two days of 4:30 AM wake up calls and 12 hour days away from home.   When I told Honey I regretted not having big plans to celebrate him, he said he wouldn’t want to celebrate any other way.  <3

Happy Father’s Day to ALL of the dads out there…. the dad’s by birth and the dad’s by choice, the fur baby dads and the moms that are dads too.  I hope you have a wonderful day!!!

School Night Supper {Apple Cider Salad + Dressing}

I made this Apple Cider Salad inspired by the one in Magnolia Table to go with our dinner one night and it was a huge hit!  All of the flavors go together so well.  The following recipe is not verbatim, but rather my short cut interpretation.
