Family Pasta Nights

Since our pasta making class in Italy, we have had THE BEST time gathering around the kitchen island to make pasta and memories on a regular basis. This has proved to be a wonderful weekend activity and something I can even get the elusive senior home for. :-)

Pasta Making at Home

We always start with the appetizers we brought home from Italy, Switzerland and now France!

We really don’t have a recipe. As we learned, much of it is about feeling the dough. Speaking in general terms, here is what we do, PER person:

  • 1/2 cup double 00 flour
  • 1/2 cup semolina flour
  • 3 egg yolks
  • pinch of salt
  • water and olive oil as needed

We start by hand mixing the flours, salt and eggs. Then, we add 1T water and 1T olive oil. From there we will add more oil and water as needed to make a nice, well blended, soft dough. Once the dough is complete, we wrap it and chill for 30 minutes. Then the fun begins! We roll it out by hand, and then by the machine. Finally, we cut it into pasta. It only needs to boil for about 4-5 minutes.

I bought the Kitchenaid Pasta Making 3-piece set and it has worked like a charm!
