Sunday Supper {Cheeseburger Pot Pie}

You might remember that my sweet friend L gave me the The VeryVera Cookbook for my birthday. Well, much to my surprise, that was only half the gift. She had also preordered me a signed copy of The VeryVera Cookbook: Generations and delivered it last week.

It is such a beautiful cookbook and I truly savored an afternoon slowly paging through it. The entire premise of the book is centered around recipes meant to be shared through generations… beloved dishes passed down, comforting meals gathered around and approachable recipes that home cooks of all ages can enjoy making together. It feels warm and nostalgic in the very best way.

For my very first recipe from the new cookbook, I chose the cheeseburger pot pie.

Oh. My. Goodness.

It was DELICIOUS.

And honestly? It tasted exactly like a McDonald’s cheeseburger (a not so guilty pleasure of mine) in casserole form, which absolutely delighted all of us. My only edit was adding a little extra cheese because my people have never once complained about something being too cheesy.

Mother and Daddy-O were here for dinner that night, and all five of us absolutely marveled at how beautiful it looked coming out of the oven. Golden brown, bubbly and smelling incredible. It received a unanimous two thumbs up around the table, and not a single bite was left by the next morning.
