Sunday Supper {Supreme Pizza Pasta Salad}

I used to make this Supreme Pizza Pasta Salad all.the.time when John was a toddler.  It was one of those recipes that somehow fell off my radar for years until I came across it in my recipe binder recently.

Supreme Pizza Pasta Salad

2 plum tomatoes, seeded and chopped
1/2 medium red onion, chopped
8 fresh white button mushrooms, sliced
1 small green bell pepper, seeded and chopped
1/2 package turkey pepperoni, each slice cut in half
1 block mozzarella cheese, diced small
20 leaves fresh basil, torn or thinly sliced
1 pound wagon wheel pasta, cooked to al dente and cooled under cold water, then drained

Dressing:
1 teaspoon garlic salt
1 teaspoon dried oregano leaves or Italian dried seasoning
1 rounded tablespoon tomato paste
2 tablespoons red wine vinegar
1/3 cup extra-virgin olive oil
Freshly ground black pepper

Combine tomatoes, onion, mushrooms, peppers, pepperoni, mozzarella, basil and pasta in a big bowl. Whisk garlic salt, oregano or Italian seasoning, tomato paste and vinegar together. Stream in extra-virgin olive oil while continuing to whisk dressing. When oil is incorporated, pour dressing over pasta salad, add a few grinds of black pepper to the bowl, then toss salad to coat evenly.

The beautiful thing about this recipe is you can really put in whatever YOU like!  When I made it last week I added a bunch of fresh spinach leaves because I had them on hand.  Olives would be another no-brainer addition, but I HATE them so there was no way they were going in my pasta.  I couldn’t find wagon wheel pasta for some reason so I used bow tie.

It makes a ton and we will eat off of it for dinner, lunches and snacks all week.  I really should have shared it earlier as it is a great warm weather alternative to slaving over a stove or heating up your kitchen with the oven.  :-)
