I love a casserole, being a good Southern woman and all. :-) What I don’t love is anything with cream of fill in the blank soup. Yuck! Especially cream of chicken. I’ve had a weird aversion to it ever since I started cooking. It might have started much younger, watching mother pull each individual piece of chicken out of the cream of chicken to make whatever casserole was on her menu. HA!

When I read through the ingredients on this Broccoli Cheddar Chicken and Rice Casserole, I knew I had to try it. Everything in it is real and it turned out beautifully. It was delicious, hearty and made plenty for my hungry boys.

Oh, and I prepared this early in the day and just popped it in the oven for an easy Sunday night.
